Merry Minty Meringue

What you'll need:
- 1 bag 3 MUSKETEERS® BRAND Mint Miniatures
- Red and green paste food coloring
- 4 large egg whites
- 1/2 teaspoon cream of tartar
- Pinch salt
- 2/3 cup sugar
- 2 large star tips
- 2 pastry bags
- Small paintbrush
- 3 cookie sheets
- Parchment paper
What to do:
- Place a star tip into a pastry bags. Paint three thin lines of red food coloring up the inside of one pastry bag; set aside. Paint the second bag the same way using green food coloring, set aside.
- Bring a small saucepan of water to a simmer over medium heat. Combine the egg whites, cream of tartar and salt in a large bowl. Add half of the sugar and whisk lightly. Place the bowl over the simmering water and whisk until the sugar dissolves and is slightly warm to the touch.
- Using an electric mixer, beat egg whites until soft peaks. Gradually add remaining sugar, one tablespoon at a time, while continuing to beat egg whites until thick and glossy.
- Divide meringue between the two prepared pastry bags. Pipe meringues into 2-inch circles, placing them 1-inch apart on parchment lined cookie sheets.
- Bake cookies, in a preheated 200-degree oven for 2-hours, rotating pans twice. Turn off oven and let cookies rest over night for extra crispness.
- Microwave 3 cups chopped3 MUSKETEERS® BRAND Mint Miniatures, stirring frequently, until just smooth, about 1 minute. Spread chocolate mixture on flat side of cookies with red strips. Sandwich green striped cookies on top, pressing flat side into the chocolate layer. Continue with remaining cookies and melted 3 MUSKETEERS® BRAND Mint Miniatures.
